You CAN Bake Scones

If I can bake scones, then you can too! Last week I told you that you can bake biscotti, and now I'm telling you that you can bake scones! Don't be afraid - you can do this. If you can bake bread or make a cake, then I know you can handle scones. And oh - homemade scones are soooo yummy.

These are my fave scones - they're cream scones and they are very simple. They are the first scones I ever made {thanks to the homemade mix & recipe given to me by a friend}!


Here's how simple baking scones can be: Mix up the dough/batter; Knead a little; Pat into circles; Cut into wedges; Bake. Sometimes you make them in other shapes or bigger or smaller. Sometimes you brush the tops with something before baking. It's really that easy. If that still scares you, they even make special scone pans that already have the wedge separations - just put your batter in and bake!

 I think you should pick a scone recipe today and make some for breakfast tomorrow morning {scones are most delicious when fresh, but still good leftover}! The above scones are the only ones that I have a recipe for here on my blog. All the other scones I've tried are from various internet sources. All were yummy! Here they are in case you want to try them...

Tea For Two-sday ~ Cinnamon-Eggnog Scones

Are you sitting down with your cup of tea?  I hope you get to have a few relaxing post-Christmas moments!  I thought I better share these scones while there might still be eggnog in the stores - in case you want to hurry up and try this recipe!

I made these Cinnamon-Eggnog Scones from King Arthur Flour for our Christmas morning breakfast.  Wow - absolutely delicious and liked by all!  I will definitely make them again next year!  They are rich and have such a nice flavor combination.

Tea For Two-sday ~ Scones

Welcome to Tea For Two-sday!  Not only is a hot cup of tea nice when the weather gets chilly, but it's also a nice way to take a mini break from the busyness of December (I'm still trying to accept the fact that it is indeed December today!).

You know what's delicious with tea?  A scone.  You know what's delicious for breakfast?  A scone.  You know what's delicious anytime you feel like eating one?  Um...a scone.  :)

I have shared scone recipes a few times on my blog and I thought I would give you all the links in one place.  I'm also including some scone recipe links that sound good from other blogs.  Try making some scones for a special December morning!

Tea For Two-sday ~ Chocolate Chip - Orange Scones

Happy Tea For Two-sday my friends! Pour your favorite tea into your favorite cup and enjoy a break for a few minutes!

Tea and scones go together so well. There are so many different kinds of scones with different flavors and textures - but they are all good! I would like to eat scones daily, but then I would have even more of a weight problem than I do!



I found this scone recipe in a Weight Watchers cookbook of mine and decided to try it. I like the scones! I had a little trouble since I ended up with batter instead of dough, but I just dropped spoonfuls of scone batter instead. They spread out and turned out more like cookies, but still were good. They have a cake-like texture and a nice orange flavor. They are just right to go with your cup of tea!

Tea For Two-sday ~ Guest Post Deliciousness

My friend Kim from Homesteader's Heart is back once again on my blog - in more ways than one! Do you see the super-cute new header above?! That's Kim's doing (and the super-cute previous header was her doing also)! Thank you, my artistic friend!! :)

But that's not all - she's guest posting for Tea For Two-sday today. She's got tea and scones - yum!! If you have not yet been to Kim's blog, you must stop by! She's always got something to make you smile and her Friday Funnies will have you laughing out loud! And she likes chocolate - I knew I liked her! Howdy everyone! This is Kim from Homesteader's Heart and I want to thank Lisa for inviting me back once again to guest post for her Tea for Two-sday. The fact that I'm guest posting usually means she is going to be off doing something really fun and I'm not! *sigh* But I'm a big girl and I'll get over it!

I have a tea review today and like most reviews they may not all be positive ones. In the last Tea for Two-sday post I did for Lisa ,I reviewed the same brand of tea but different flavor and it was delicious. I figured this time around I would buy a different flavor and neither I or my daughter thought it was all that great.

But to make up for it I am bringing you a delicious scone recipe to go with one of YOUR favorite teas or with the tea I recommended last time. My friend Kathy from Blessed Beyond Imagination came up with this recipe and it is delicious! See?!



It's great paired with a nice salad as well. Makes a great Tea Time lunch!

Bacon and Cheese Scones Recipe From Kathy's Cooking Blog The Wooden Spoon

You can change up the meats to chunks of ham, or smoked turkey, and change up the cheese to swiss or any other cheese that you prefer. They are tasty, flaky, a tiny bit spicy and just plain yummy!

I like to bake this on my preheated Pampered Chef stone atop a sheet of parchment paper, but you can use a cookie sheet.

Ingredients:

2 cups flour (I prefer Whole White Wheat by King Arthur)
1 tbsp. Baking Powder
2 tsp. Sugar
1/4 tsp. Salt
1/4 tsp. ground cayenne pepper
3 tbsp. cold butter
3/4-1 cup shredded cheese (I use fiesta mix cheese because that's usually what I have)
1 pkg. bacon (try Applegate Farms with no nitrates) cut all the white fat off, cook and crumble
3/4 cup fat-free buttermilk (1 tbsp. lemon juice + skim milk to = 3/4 cup)
1 large egg

Heat oven to 400. Whisk together flour, baking powder, sugar, salt and cayenne in a large bowl. Cut in butter with a pastry blender or your fingers, leaving pea size chunks for best flakiness. Stir in the cheese and bacon. In a small bowl combine milk and egg with whisk; add to flour mixture, stir just until moist.
Turn it onto the parchment paper and with water dampened hands, form it into an 8-inch disk.
Slice it 3/4 of the way through into 8 wedges.

Slide parchment onto preheated stone (or form this on a lightly buttered cookie sheet). Bake 20 minutes or until lightly browned.

Tea For Two-sday ~ Strawberry Scones

Welcome to Tea For Two-sday! May I suggest that you get a tall glass of iced tea today before reading rather than hot tea since we seem to be having a heat wave? I'll take mine unsweetened with a splash of lemonade, but I think the majority of you prefer sweet tea!

We had a Mother Daughter Tea for church this past Saturday and I helped out with the food and favors. The bonus is that I have something to post about for a few Two-sdays! It turned out very nice and was a great time of fellowship.



I usually make white chocolate apricot cream scones, but I had seen these Strawberry Mascarpone Scones at good Life {eats} and tested them out. Yum! So I made them smaller by making 4 rounds instead of 2 and still cutting each into 8 wedges. Smaller scones, but plenty of them! They are a little heartier scone and a nice way to use some fresh strawberries. I wish I had better photos of them - but hopefully you get the basic idea.



They were yummy and it was nice for me to try out a new scone recipe! And now you have another recipe to use with your strawberries. Stop over at good Life {eats} for the recipe and tell her hello!

Tea for Two-sday: Rerun of White Chocolate Apricot Cream Scone Mix

Sorry for the late Tea posting! Was a busy day helping my Dad. I decided to rerun my very first Tea for Two-sday post - back when 1 or 2 people started to read my blog. And it just so happens to be an absolutely delicious scone recipe, so I want to be sure that you have it!

I enjoy tea parties and want to share ideas, recipes, etc. for tea parties. So join me for Tea for Tuesdays!

I helped with a baby shower tea last weekend - it was lots of fun. We had scones, of course, and here is the recipe - everybody loves these! My friend Melanie likes to give this recipe out at Christmas with a mix of the dry ingredients. The recipe says to cut into wedges, but I have also cut into circle and flower shapes depending on the occasion.



WHITE CHOCOLATE APRICOT CREAM SCONE MIX
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1/2 cup dried apricots, chopped
1/4 cup white chocolate chips
(or use 1/2 cup dried cranberries, chopped, and 1/4 cup walnuts, chopped, in place of the apricots and white chocolate chips)

Whisk all above ingredients together until combined.

SCONES - How to prepare

Purchase 16 oz. heavy cream. Have a little sugar on hand. (Clear sparkling sugar is great if you have it.)

Preheat oven to 425 degrees F. Use an ungreased baking sheet (cover with parchment paper, if available).

Pour mix in medium bowl. Stir mix with fork. Still using fork, stir in 1 1/4 cups heavy cream and mix until dough holds together in a rough mass (dough will be sticky).

Lightly flour a board and transfer dough onto it. Knead dough 8 or 9 times. Pat into 2 circles about 6 in. round. Spread 3 tablespoons melted butter over top and sides of dough rounds and sprinkle with sugar. Cut each circle into 8 wedges and place on baking sheet, allowing about an inch between each. Bake for about 11 minutes or until golden brown.

While scones are baking, whip remaining 3/4 cup heavy cream into whipped cream. You can add a small amount of sugar to cream just before it is stiff enough. Delicious with the scones!

Enjoy! These are best eaten warm.
