Double Chocolate Walnut Biscotti

This a really yummy biscotti recipe - so good with a cup of coffee or hot chocolate to dip it in, but also good just by itself! Don't be intimidated by biscotti. If you can make cookies or a cake, you can make biscotti. The first time I ever did it, I was surprised at how uncomplicated it was.

Double Chocolate Walnut Biscotti

2 cups flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
6 tablespoons unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 cup walnuts, chopped
3/4 cup semisweet chocolate chips
1 tablespoon powdered sugar

Preheat oven to 350 degrees F. Butter & flour a large baking sheet (or cover with parchment paper). In a bowl, whisk together flour, cocoa powder, baking soda, and salt.

In another bowl with an electric mixer, beat together butter and granulated sugar until light and fluffy. Add eggs and beat until combined well. Stir in flour mixture to form a stiff dough. Stir in walnuts and chocolate chips.

On prepared baking sheet, with floured hands, form dough into 2 slightly flattened logs, each about 12 inches long and 2 inches wide. Sprinkle with powdered sugar. Bake logs 35 minutes, or until slightly firm to the touch. Cool biscotti on baking sheet 5 minutes.

On a cutting board, cut biscotti diagonally into 3/4 inch slices. Arrange biscotti, cut sides down, on baking sheet and bake until crisp, about 10 minutes. Cool biscotti on a rack. Biscotti keep in an air-tight container 1 week, and frozen, 1 month.


Go ahead - try making some this weekend! They also make a nice gift when given with some hot chocolate, coffee, and a mug. I also included them with my Coffee Break in a Box!

  3. Okay, Lisa, I am intimidated! LOL! You might just want to put my name in the giveaway pot one more time! LOL! This sounds delicious! I love biscotti! I just might try this in the near future! I'm still excited about doing your mexican cake recipe for my dad for Father's Day! I think he will just love it!
