Pumpkin Potpourri Week ~ Day 4 ~ Pumpkin Dessert

If you've been on my blog for a while, you will see that I like to write silly little rhyming poems, like here and here. In honor of Pumpkin Potpourri Week, I wrote another one. Warning - not very good quality, just silly!

The pumpkin sat near the welcome mat,
And greeted folks that said hi.He would peek in the door across the floor,
And let out a little sigh.For he longed to be on display, you see, Where it was warm and dry.
One day he was lifted and to the kitchen shifted,
Though he did not know why.
It seemed a win to be taken in
After all that time had passed by
But that very same day, to his dismay,

He became a pumpkin pie!

So pumpkin has been at Thanksgiving from the beginning!

Today's recipe is one of my favorite pumpkin recipes. I got it from a friend years ago. The pictures don't do it justice - it is buttery delicious!!

Pumpkin Dessert
3 eggs, slightly beaten
1 (12-1/2 oz) can pumpkin
1-1/2 cups evaporated milk
1 cup sugar
1 teaspoon salt
2 teaspoons cinnamon
1 tablespoon vanilla extract
1 box yellow cake mix
1-1/2 sticks butter or margarine
1 cup nuts, chopped (I use walnuts)

Combine eggs, pumpkin, milk, sugar, salt, cinnamon, and vanilla; mix and pour in 9x13 in. glass Pyrex dish. Combine yellow cake mix and butter; mix until it resembles meal, and sprinkle over pumpkin mixture. Sprinkle nuts. Bake at 350 degrees F for 1 hour.

  5. I think it is not fair that Kim gets to post first just because she leaves in a different time zone. Post your blog later in the day and give the rest of us a chance. Or I might have to get my bohunkus (SP?) out of bed really early.

    I loved the poem...took me by surprise for I was thinking Oct before November and he was going to become a Jack-O-lantern.

    I LOVE anything and every thing pumpkin so this week has been so much fun. I can't wait till I go to the grocery store and get the stuff to make a couple of your recipes. Thanks for doing this all this week and giving us such a fun time.

  8. I've had this recipe before minus the nuts. I think I need to try it with the nuts. We also put a splot of whipped cream on top before serving. My family makes this every Thanksgiving along with pumpkin pie(of course). It is one of my favorites!

  12. OK this looks really good. But my guys are allergic to eggs. So since pumpkin is sometimes used as an egg substitute, I wonder if I could just leave out the egg. Any thoughts?

  14. For Mi (and anybody else allergic to eggs), try an egg substitute that I saw at Grocery Cart Challenge using soy flour and water:

  17. What a cute poem. How funny. The cake looks yumy. Nothing like pumpkin and spices this time of year. I just love those scents. I have 5 pumpkin scented candles right now. Just in case I run out. lol
