Would You Like Chocolate With That? ~ Peppermint Cloud Brownies

Welcome to Chocolate Friday!  Usually I'm happy to get to the end of a week - especially when it involves chocolate - but this time it means that there are less days to get ready for Christmas!  I have SO much to do!  How about you?  Either way - you should enjoy some chocolate!

I found this recipe in a magazine last year, but never had a chance to try it out.  It was the perfect recipe to make now since I have to take some goodies to my son's Christmas concert.  The brownie part is dense and chocolatey and the marshmallows are gooey/sticky and blend well with the crushed candy cane.  Though I think I would love a white chocolate frosting with the crushed peppermint on top.  Some people are never satisfied.  ;)



Peppermint Cloud Brownies

1 stick unsalted butter 
2 oz. semisweet chocolate 
1/2 cup unsweetened cocoa
3/4 cup packed light-brown sugar
2 large eggs
1/2 cup all-purpose flour
1/4 teaspoon salt
2/3 cup chopped pecans
1/3 cup milk
1 teaspoon vanilla extract
1 1/3 cups mini marshmallows
3 tablespoons crushed peppermint sticks (AKA candy canes)

Heat oven to 350 degrees F.  Butter an 8-inch square pan and line with a strip of parchment overhanging on two sides.  Butter parchment; set aside.

In saucepan, melt butter, chocolate and cocoa on low heat, stirring until smooth.  Remove from heat and stir in sugar, eggs, flour, salt, nuts, milk and vanilla until combined.

Spread batter into prepared pan.  Bake until just set, 20 minutes.  Remove from oven, top with marshmallows and bake until marshmallows are puffed, another 5 minutes.  Immediately sprinkle with peppermint.  Cool in pan.  Loosen edges and lift brownies from pan using parchment.  Use a buttered knife to cut into squares.  Store airtight up to 1 day.

  2. MMMMMmmmm, where have ya'll been all my life??? There's not much this Ozarks farm chick wouldn't put chocolate on. I have to confess it is my drug of choice. I have always believed that Midol works better with chocolate. I've gotta' make these brownies!

    So I have to be honest, I'm not a big fan of marshmallows. But your pictures are fabulous! LOL

  6. Oh yummy. I love peppermint and chocolate!!! I had a dear, sweet friend who made peppermint brownies (her specialty) and they were perfect - she's gone onto heaven and I never got her recipe - but these might give me a sweet alternative. Everytime I see peppermint brownies I think of my sweet friend Jackie.

  8. Ooooh, these look yummy! I have the same problem with the link. You can go in and edit your link.

    The only way I've been able to change it is to first publish my post, along with the McLinky. It will say that the linky isn't open yet so noone can link up.

    Then go to the McLinky page and just sign in (if you need to) and then select the "Your Lists" button (it's gray). Then, once in there find your meme link and select edit.

    Then go to the "Dates Allowed" and choose the date you want the McLinky to start. Then go to the bottom of the page and select the button that updates your changes. It should work!
