Would You Like Chocolate With That? ~ Basic Chocolate Chip Cookies

Welcome back to Chocolate Friday!  I hope you've had a good week and I hope you have some chocolate on hand as a reward!

My son likes the basics and he doesn't like a lot of chocolate (shocking I know!), so he isn't a fan of most of the new recipes I try out.  When I recently made the Orange Chocolate Sliced Cookies, he sighed, hung his head and then asked, "Mom, why can't you ever just make regular chocolate chip cookies - something that I like?"  So I promised to make some "regular" chocolate chip cookies for my poor deprived child.  :)

The funny thing is that I have rarely made chocolate chip cookies from scratch.  Once when being "real" on my blog, I showed you my go-to chocolate chip cookie mix.  But I realized that there was no reason I couldn't do these cookies from scratch.  Last time I made some I tried the Nestle Tollhouse recipe - yummy!  This time I wanted to try another version, so I used the basic recipe in my good old BHG cookbook.


 Chocolate Chip Cookies

1/2 cup shortening (I used coconut oil)
1/2 cup butter
2 1/2 cups all-purpose flour
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon baking soda
1 12-oz. pkg semisweet chocolate chips (2 cups)
1 cup chopped nuts (optional - I left them out)

Preheat oven to 375 degrees F.  In mixing bowl, beat the shortening and butter with an electric mixer on medium to high speed for 30 seconds.  Add about half of the flour, the brown sugar, sugar, eggs, vanilla, and baking soda.  Beat mixture till thoroughly combined.  Beat in the remaining flour.  Stir in chocolate chips and, if desired, nuts.

Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.  Bake in preheated oven for 8-10 minutes or till edges are lightly browned.  Cool cookies on wire rack.  Makes about 60.

I do like these cookies (they make my son very happy!) and I also like Nestle Tollhouse cookies, but I know I've had even yummier chocolate chip cookies.  I'd like a nice thick, slightly soft chocolate chip cookie.  Do you have a favorite chocolate chip cookie recipe?

  2. I almost always use the Nestle recipe for Toll House cookies. Alton Brown once did a "Good Eats" episode on chocolate chip cookies, though; I know he explained how to make them chewy or soft or crispy. The recipes used to be on the Food Network site, but I don't know if they still are. Hope this helps. :)

  3. Chocolate Chip cookies are my husbands favorite! From scratch of course! LOL!

    Big dumping a whole bag of chips into the dough by accident isn't a bad thing size hugs to you!

  5. You asked for Chocolate Chip Cookies, so even though I've linked our recipe before, I thought I'd do it again. It's basically the one you used, but over the years it has evolved a bit. I often add a 1/2 teaspoon of baking powder, and our brown sugar/white sugar ratio is even. We experimented once with the different types of butter/shortening, and that's really what makes the difference. When I made them last week I used a combination of butterscotch/white/semi-sweet chocolate chips and my son called them the "best ever" chocolate chip cookies. What high praise!!! Enjoy experimenting (and sorry for the long comment).

  6. Oh goodness girl! There is nothing like a nice warm Choc Chip Cookie right off the rack, YUM!!!!! I'll have to see if I have something in my archives to link up....I haven't posted many new desserty types lately. :)

    That's my favorite Choc chip cookie, the trick is making them big, so the middle stays chewy and soft. The extra egg yolk and the extra brown Vs white sugar helps.

  11. One of my sons was diagnosed with esophatitus and cannot have chocolate, caffeine or mint. My youngest one has the same symptoms, so we try to limit. However, we try to splurge a little, but otherwise I have had to learn to cook in an opposite world - a non-chocolate world.
