Cocoa Crispy Bars

I originally published these bars on my healthy blog a long time ago, but wanted to put them here. Found them in a Weight Watchers magazine years ago - but they're yummy whether you're a dieter or not. It's a nice variation on rice crispy treats - and well...there's chocolate involved so that's always a plus - LOL! :)

They're easy to make - try them out and let me know what you think!

Cocoa Crispy Bars

2 tablespoons unsalted butter
1 ounce unsweetened chocolate, finely chopped or grated
1 (7 oz.) jar marshmallow creme
2 tablespoons unsweetened Dutch-process cocoa powder
1 teaspoon vanilla extract
6 cups crisped rice cereal

1. Spray a 13x9 in. baking pan with nonstick spray.

2. Melt the butter and chocolate in a large saucepan over low heat. Add the marshmallow creme, cocoa, and vanilla; stir until smooth. Remove from heat and add the cereal, stirring until well-coated.

3. Spread the mixture into the prepared pan. Spray your hands with nonstick spray and press the batter down evenly. Let cool 10 minutes, then cut into 24 squares.


Bonus - if you are a WW person, the "old" points were only 1 pt per piece {if cut into 24}! These are best {freshest} when eaten in a couple of days - but is that really going to be an issue? ;)

  1. Have you read the ingredients on a jar of marshmallow creme? I'm just sayin'. LOL! You know I had to say something.
    Back in the day I would eat peanut butter and marshmallow fluff sandwiches all the time. Oh how I loved them.
    Big to bad it's today and not back in the day size hugs to you.

    1. I don't eat it very often, so I'm not worried about it! But there are plenty of recipes online to make homemade marshmallow creme/fluff so anybody can make it a little more "healthy" if they like! :)

    i love rice krispie treats, but haven't ever tried them with cocoa krispies... yours look great!

    I'm counting the days now, for our trip and then the coming of my boys!
    I've made rice crispy bars, but never with chocolate. This one goes on my list with yummy things to make for the boys.
