Refrigerator Oatmeal Chocolate Chip Cookies

This recipe was given to me by one of my aunts, but I've never tried it until recently {shame on ME}. SO yummy!! I just made a couple changes and they were too good to stop eating! :)



This batter was dangerously delicious and almost didn't even make it to the cookie stage - LOL! :) Now, it contains raw egg so don't you go eating it and then getting sick and then blaming me. Next thing, you'll be wanting me to tell you that coffee is hot. ;)

Just out of the oven and yummy even without the frosting drizzle!

Refrigerator Oatmeal Chocolate Chip Cookies

1 1/4 cups packed brown sugar
1 cup coconut oil*
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 cups old fashioned oats
1/2 cup mini chocolate chips (optional)
Frosting, if desired

Cream oil and sugar in mixing bowl. Add eggs and vanilla. Beat well. Add dry ingredients and mix well. Add oats and mix well. Stir in chocolate chips.

Shape dough into two rolls/logs and wrap in plastic wrap or wax paper. Refrigerate several hours or overnight.

Preheat oven to 350. Slice cookies thinly. Place on ungreased baking sheet. Bake 10 minutes. Remove to wire rack and cool.

To make Frosting: Mix enough milk with 1 cup powdered sugar to make a runny icing. Drizzle over cooled cookies.

*The original recipe called for Crisco, which I don't use, but feel free to use shortening if you desire. I used the kind of coconut oil that still has a mild coconut flavor and it was a delicious addition to these cookies!
