Low-Carb Waffles

It's National Waffle Week people!! Are you celebrating?! :) Well you should at least use it as an excuse to have waffles this week.

My family loves waffles, especially since I picked up a Belgian waffle maker at a thrift store a couple years ago. I enjoy waffles {and pancakes and French toast} but I need to have protein along with them so I don't feel shaky or starved just a short while later. Having low-carb {with plenty of protein} waffles solves that problem! These waffles are not only delicious, but they are filling and stick with you - a great start to the day! I love them in combo with some fruit. Bonus for many of you - they are gluten-free also!


Makes a nice thick batter! This recipe makes about 8 waffle squares in my Belgian waffle maker. I found the original recipe in a low-carb cookbook by the authors of the Protein Power diet.

Low-Carb Waffles

6 ounces cream cheese, softened
5 large eggs
1/2 cup vanilla whey protein powder*
1 1/4 cups whole almond meal
1 teaspoon baking powder
1/4 cup heavy cream
3 tablespoons butter, melted

In large bowl {with a mixer is easiest} beat cream cheese and 2 eggs until thick and fluffy. Add remaining eggs, 1 at a time, beating briefly after each. Add remaining ingredients and stir by hand.

Prepare waffle iron. When heated, spoon batter in. Heat until done {2-4 minutes, depending on your waffle iron}. Tip - when storing finished waffles, don't pile them on each other or they'll get soggy! Waffles may be frozen and reheated in a toaster after thawing.

* I used a protein powder that was sweetened and had a vanilla flavor. You can use unsweetened protein powder and add your choice of sweetener to taste plus 1/2 - 1 teaspoon of vanilla extract if desired. If you don't have protein powder, try subbing powdered milk {I haven't tried this to check consistency.}

Enjoy your waffles with butter and syrup or topped with fruit! I'll be trying a new recipe using these waffles and will post it in the next day or two - whether it's a success or a flop! Stay tuned. :) ~ It was a success! {Waffle & Bacon Breakfast Parfaits}
