Tea for Two-sday ~ Dried Cranberry Biscotti

I've given you my chocolate biscotti recipe before, but I also make this dried cranberry biscotti at Christmas and other occasions. I happen to think that this biscotti goes really well with tea - not just the flavor of it, but the prettiness, too! In fact, I've packaged it up with teacups or mugs and tea to give as gifts. It is really yummy!

Don't be scared - biscotti is much easier to make than it sounds. Try this out and enjoy it with your afternoon tea. I guess you are allowed to have it without tea - it's still delicious! :)


Dried Cranberry Biscotti
2-1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1-1/2 cups sugar
1/2 cup butter at room temp
2 large eggs
1/2 teaspoon almond extract
1-1/2 cups dried cranberries
1 egg white

Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper. Combine flour, baking powder, and salt in a medium bowl; whisk to blend. Using an electric mixer, beat sugar, eggs, butter, and extract together. Mix in flour and then dried cranberries.

Divide dough in half. Using floured hands, shape each piece into a log directly on the baking sheet. Whisk egg white and brush top and sides of each log. Bake 30-35 minutes until golden. Cool completely. Slice logs with serrated knife and bake 10 minutes on baking sheet without parchment paper. Turn biscotti over and bake additional 5 minutes. Cool completely on wire rack. Store covered at room temp for up to a week. Can be frozen for a month.

  1. I consider myself a fairly good baker but I've never tried to make biscotti. Your recipe for the dried cranberry biscotti sounds so good though that I'm ready to step outside my comfort zone.

  4. Mmmm, that sounds delicious. I love to make biscotti, it's such a yummo snack cookie. This recipe reminds me of one I think you would like, Chocolate Chip and dried Cherry Biscotti. :)

  6. I'll definitely try this out. My girls regularly host "tea parties" for each other (I have 6 daughters) and they have made biscotti once before but we're going to try your recipe.
