Works-For-Me Wednesday: Slow Cooker Stuffing

I seem to have a thing for slow cooker recipes, so when I found this one a few years ago I had to add it to my Thanksgiving menu! I love that it saves oven space at a time when I need every spare inch. Family members love it and look forward to it, so I know it's a keeper.

Here's a pic of it all mixed up before going into the slow cooker. One of these times I might actually remember to get a pic of it *after* cooking! :)


Slow Cooker Stuffing

1 cup butter, unsalted*
2 cups chopped onion
2 cups chopped celery
1/4 cup chopped fresh parsley
12 ounces sliced mushrooms
12 cups dry bread cubes
1 teaspoon poultry seasoning
1 1/2 teaspoons dried sage
1 teaspoon dried thyme
1/2 teaspoon dried marjoram
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
4 1/2 cups chicken broth*, or as needed (I usually only need 2 cups or so)
2 eggs, beaten

1. Melt butter in skillet over medium heat. Cook onion, celery, mushrooms, and parsley in butter, stirring frequently.

2. Spoon cooked vegetables over bread cubes in a very large mixing bowl. Season with poultry seasoning, sage, thyme, marjoram, and salt and pepper. (I find that stirring the spices into the vegetable mixture before spooning it over the bread cubes distributes more evenly.) Pour in enough broth to moisten - just moist, not too wet! - and mix in eggs. Transfer mixture to slow cooker, and cover.

3. Cook on high for 45 minutes, then reduce heat to low, and cook for 4-8 hours.

I usually cook for the 45 minutes at high and the 4 hours on low ('cause I'm usually running short of time!). If the mixture is too moist at that time, I leave the cover off for a bit.




* I find that this mixture can easily get too salty. I suggest using some unsalted butter and/or low-sodium chicken broth. This year I'm going to try using half unsalted butter and half salted.<---Still a little salty, so I'm changing the directions to all unsalted butter unless you use low-sodium chicken broth.

  1. You know I'm really big on putting the stuffing in the turkey just because it comes out so flavorful and moist but that is very tempting. I may have to try that on a different occasion. Thanks for sharing it my friend.

  4. What a great idea! If I didn't already have my very first Thanksgiving meal planned, I would totally do this! The stuffing I'm making is a sausage stuffing...I hope it turns out well! :)

  10. Thank you so much for this! It was just want I was looking for. My husband asked that we try a different stuffing this year, in addition to our old standard. As my oven is always full, I had wondered if I could use my crock pot. Now I know I can!

  11. I just wanted to pop back to this post and thank you again for the crock pot stuffing recipe. I used it for Thanksgiving and it worked so beautifully. My SIL called the next day for the recipe because my BIL loved it so much. I'll be using it again for Christmas dinner. I don't know what will be on the menu yet except for this.
