Tea For Two-sday ~ Spiced Chai Tea Cake

Happy Tea For Two-sday! Grab a cup of tea - well grab doesn't really sound right, how about - delicately pick up your cup of tea and enjoy a new recipe!

When I saw this recipe, I just had to try it. I found it in a cookbook called homemade in a hurry. This is a nice cake to have with tea and it's made with tea! Lovely!


Spiced Chai Tea Cake

1 box (about 18 oz) spice cake mix
1 1/2 cups chai tea latte concentrate, such as Oregon Chai
1/3 cup nut oil, such as walnut oil
3 eggs, large or extra-large
8 slices crystallized ginger, finely diced (about 1/2 cup; optional) - I left this out
1 cup prepared whipped cream cheese icing

Heat oven to 350 F. Spray the interior of a nonstick Bundt pan with nonstick flour and oil baking spray.

Combine the cake mix, 1 1/3 cups chai concentrate, oil, and eggs in a large bowl and beat until smooth and fluffy, about 2 minutes. Stir in the candied ginger, if desired. Spoon into the Bundt pan and bake until a tester inserted in the crest of the cake comes out clean, about 40 minutes. Cool in the pan for at least 20 minutes. Invert the cake onto a serving plate and cool to room temperature.

Mix the icing with the remaining chai concentrate and drizzle over the top of the cake, allowing the glaze to run down the sides in rivulets. Slice and serve. Makes 16 servings.

The cake was yummy - the chai tea in it really enhanced the flavor. I do have to say that I think it would be much more delicious if you made the spice cake from scratch rather than a box mix and the same with the frosting. Do whatever you prefer! I think you'll enjoy the flavor either way!

I hope you get a chance to try out this cake and have a cup of tea with it. Of course, you will have chai tea concentrate left over, so you might have to have a chai tea latte with it!
