Autumn Apples Week {Day 5 ~ Loaded Caramel Apple Upside-Down Cake}

Day 5 of Autumn Apples Week! I really hope you’ve enjoyed this week!

I know it’s a week about apples, but I had to find a way to incorporate chocolate – one of my other favorite Fall foods! This cake recipe is a rich coffee cake and would be fantastic with your favorite Fall drink. And it’s been officially endorsed by the staff at my son’s school! I took the cake there since I was volunteering and it was completely gone before the end of the day and raved about by all.

 

Loaded Caramel Apple Upside-Down Cake

adapted from Cooking Light

½ cup + 2 tablespoons caramel sauce {I used homemade – y.u.m.}

1 Granny Smith apple, cored, peeled, and thinly sliced

1 ½ cups unbleached flour

2/3 cup brown sugar, packed

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup buttermilk

½ teaspoon baking soda

¾ cup coconut oil, melted {can use vegetable oil}

1 teaspoon vanilla extract

2 eggs, lightly beaten

1 tablespoon mini chocolate chips

¼ cup pecans, toasted and finely chopped

Chocolate drizzle {melted chocolate chips}

Preheat oven to 350. Spray cooking spray in 8-inch square or round pan. Pour caramel onto bottom of pan. Arrange apple slices over caramel, overlapping slightly as needed.

In large bowl, combine flour, brown sugar, cinnamon, and salt. Stir with whisk until well-combined. In medium bowl, combine buttermilk and baking soda. Stir with whisk. Stir in oil, vanilla, and eggs. Add buttermilk mixture to flour mixture. Stir together just until blended. Pour batter over apple slices in pan.

Bake at 350 for 30 minutes or until pick inserted comes out clean. Remove from oven and place on wire rack. Cool in pan for 10 minutes. Put an upside down plate on top of cake pan. Carefully invert cake onto plate. Sprinkle mini chocolate chips over top of cake. Sprinkle chopped pecans evenly over top. Drizzle melted chocolate as desired. Drizzle 2 tablespoons of caramel sauce on top. Serve warm or at room temp.

Notes:

• If you use a square pan, this recipe should work fine. If you use a round cake pan like me, then be warned of oozing caramel that smokes on the bottom of your oven! Either use a little less caramel {but who would want that??} when using a round pan or put a cookie sheet or foil on the rack below and expect a little smoke.
• I didn’t use all the apple slices from 1 apple – just fit what you can. 
• I use the kind of coconut oil that does not have a coconut flavor {from Tropical Traditions – not an affiliate}, but I think that the kind with a coconut flavor would be delicious in this cake too.
• For the chocolate drizzle, I melted a small handful of semi-sweet chocolate chips in the microwave 1 minute, stirred until smooth, filled a small plastic baggie, snipped off a corner, and then drizzled.

Maybe I Need To LET. IT. GO. {Giveaway}

It's definitely time to celebrate! Monday was my 4-year Blogaversary {4 years - amazing!} and Friday is my birthday - woo hoo!! That means we need to party it up! Go ahead - have some cake! :)

It's hard to believe that it's been 4 years since I started blogging. Now that doesn't mean I've blogged the entire 4 years - I took a few breaks along the way and even "quit" for 4 months last year. But I've been back to it for a solid year and feel like I'm just now really getting back into the groove. I've also been a Contributor at Pennies & Blessings for a year now which has helped me stretch myself a bit {I just shared Chicken Enchilada Casserole over there}.

Tintin + Cost Plus World Market + Chocolate = Giveaway

Oh I do love a chocolate giveaway!  More about that in a bit though...

Have you seen the movie The Adventures of Tintin?  My family saw the movie and thoroughly enjoyed it!  Lots of high adventure and amazing lifelike animation!  It may be a bit much for younger children - you can check out the info and trailer and decide.  My son is 12 and he absolutely loved it!  I loved it too!  I first discovered the Tintin books in the library when I was a kid and really enjoyed following his adventures.

They have things like Tintin metal lunch boxes, mugs, travel pasta that comes in fun shapes and a few more items!  But better than all that (in my world anyway), is this - Tintin chocolate bars!  Each of 4 different bars is a different flavor and has a different character from the movie.  I bought a milk chocolate bar to share with my family and it was yummy - of course!

Pumpkin Posting Party All Week ~ Roasting A Pumpkin

Starting a week-long party all about pumpkin without promoting it or even giving you a hint is really not the *proper* way to do things here in the blogosphere, but hey - sometimes I'm a rebel.  :)

I've done a Fall theme week the last 2 years, so I had to do another one this year!  Welcome to my Pumpkin Posting Party!  It's all pumpkin, all week!  I've got a little giveaway for you that I'll share at the end of this post and Wednesday you can come by and link up all your pumpkin posts!  Friday will be Dessert Friday with a focus on pumpkin, but you can link up any chocolate, non-chocolate or pumpkin desserts that day!

Recently I received a free pumpkin from my friend's garden so I decided to attempt roasting a pumpkin for the first time.  There were several different methods posted online, but I ended up going with more of a steaming method.  I basically followed the instructions posted at Elana's Pantry on how to roast a pumpkin.

Here's my pumpkin!

Scooped out all the seeds and strings.

Removed some liquid, whisked into puree, and bagged.

Pumpkin seeds rinsed and cleaned, ready to dry and roast.

The pumpkin flesh ended up a little watery with this method, but I preferred that to the thought of it getting too dry.  This pumpkin gave me enough puree to equal 2 cans of pumpkin!  I put 1 batch into the refrigerator and made pumpkin bread with it (it was delicious with the fresh pumpkin)!  The other batch is in my freezer, waiting for just the right pumpkin recipe!  I felt like Elana's method was very easy to follow.

I did end up cleaning the pumpkin seeds - it took me so loooooonnngg because I was obsessed with getting every bit of pumpkin off of them.  Not an easy task!  Once they were dry, I roasted them with some oil and sea salt.  They did turn out yummy, but my hubs and son weren't that excited about them.  It was such a small amount for the amount of time I spent on them that I wouldn't do it again.

Happy Monday friends!  I hope all of you had a lovely weekend (and I hope you had some chocolate - I know I did - LOL)!

Starting back into blogging after my Summer break almost felt like starting over in some ways.  I am trying to find my "voice" again.  This is a good time to look at my blog, get some feedback, and make some minor changes if necessary - a sort of blog relaunch.

Tropical Traditions Giveaway

Remember when I had a yummy Tropical Traditions coconut oil review and giveaway?  Well I got to try another Tropical Traditions product:  Organic Coconut Peanut Butter!  Oh so yummy!

The Coconut Peanut Butter is just 2 ingredients blended together - organic Valencia peanuts and organic unsweetened coconut.  It doesn't get more simple and natural than that!  The combination is great!  Both hubs and I enjoyed the flavor and honestly, we mostly ate it by digging it out of the jar with pretzels as a snack - LOL!  I did want to try a recipe with it though and I'm glad I did.
